Cellar Door Chardonnay

The cool climate of the 2022 vintage helped produce wines with exceptional flavor development, resulting in elegant wines with captivating aromatics and distinctive character. These wines showcase vibrant acidity, freshness, and moderate alcohol. After hand-harvesting and gently pressing the grapes, we fermented part of the juice in new French oak barrels, while the rest was fermented in stainless steel tanks. Post-fermentation, the barrel-aged wine was kept on its lees with traditional batonnage to build complexity and depth, while the tank-fermented portion was kept oxygen-free to preserve its fresh aromatics. Once the desired texture was reached in the barrel-aged portion, we blended it with the tank-fermented wine before bottling.
