To create Curieux, we age our Tripel, a Belgian-style golden ale, in bourbon barrels for about seven weeks. Once aged, we blend the barrel-aged beer with fresh Tripel to infuse it with rich notes of vanilla, caramel, oak, and a touch of bourbon. First brewed in 2004, Curieux continues to be our most popular barrel-aged beer.

This beer is named to celebrate the deep agricultural heritage of Maine’s sixteen counties. True to this spirit, we craft the beer using grains solely sourced and processed in Maine, such as Maine Malt House 2-row malted barley, Blue Ox Malthouse 2-row malted barley, Maine Grains raw wheat, and Aurora Mills & Farm oats. Sixteen Counties features a golden color and offers flavors of honey, tropical hops, citrus, and a subtle cereal grain note. Its taste embodies the future of Maine’s high-quality farming traditions. Our first seasonal winter ale, brewed with the colder months in mind, features coriander, orange peel, and a custom spice blend. As we’ve mentioned before, our family never follows the usual path, and Kriek Lindemans is a perfect example of this. For generations, we've been adding whole sour cherries to our lambic to create a beer unlike any other. A pivotal moment came in the 1970s when American importer Charles Finkel introduced us to a new opportunity—exporting our traditional kriek to the United States by boat. What we hadn’t anticipated was that the movement of the waves would reactivate the fermentation, causing the corks to pop during the journey. It felt like something straight out of The Adventures of Tintin. To avoid this, we developed a new production method for our kriek. Instead of using concentrate, we blend fresh, unsweetened cherry filtrate with lambic that is at least one year old. The mixture is then fermented and macerated for up to three days before being pasteurized. This prevents the corks from popping and results in a sweeter, fruitier kriek.

Orval beer is a high-fermentation brew, with an aging process that imparts a fruity note, creating a delicate balance between its rich, complex flavor and its bitterness. First brewed in 1931, Orval’s distinctive taste is attributed to the exceptional quality of its water, hops, and yeast. The brewery carefully selects aromatic, unique hop varieties, a nod to Orval’s first brewmaster from Bavaria. The beer’s pronounced aromas are complemented by the perfect level of bitterness, achieved through the traditional English dry hopping method. ABV: 6.2% Region: Belgium

Westmalle Dubbel (7%) is a deep red-brown beer with a rich, complex flavor, enhanced by bottle re-fermentation. The long, dry finish of this well-balanced, mild Trappist beer lingers pleasantly. Trappist or Dubbel? In 1865, the monks of Westmalle began brewing a dark Trappist beer alongside their table beer. In 1926, they refined the recipe by doubling the quantities of raw ingredients, resulting in a stronger beer. The name "Dubbel" reflects this increased strength, though it’s often simply referred to as ‘Trappist’. The recipe from 1926 remains the foundation for Westmalle Dubbel today. The cool climate of the 2022 vintage helped produce wines with exceptional flavor development, resulting in elegant wines with captivating aromatics and distinctive character. These wines showcase vibrant acidity, freshness, and moderate alcohol. After hand-harvesting and gently pressing the grapes, we fermented part of the juice in new French oak barrels, while the rest was fermented in stainless steel tanks. Post-fermentation, the barrel-aged wine was kept on its lees with traditional batonnage to build complexity and depth, while the tank-fermented portion was kept oxygen-free to preserve its fresh aromatics. Once the desired texture was reached in the barrel-aged portion, we blended it with the tank-fermented wine before bottling. We harvest our Riesling grapes early (20-21 Brix) to create a refreshingly sweet wine with a lively mouthfeel. Bursting with fresh, fruity flavors of pineapple and peach, this wine is crafted using only native yeast and fermented at low temperatures in stainless steel tanks—without any oak or malolactic fermentation. The fermentation is halted at around 7% residual sugar, and we quickly clarify the wine to preserve its vibrant freshness and fruit character. A touch of natural carbon dioxide is retained to enhance the lively mouthfeel. The result is a moderately sweet, low-alcohol wine with bright, tropical flavors. Our Sweet Riesling is the perfect complement to bold, spicy dishes like Thai, Szechwan, and Caribbean cuisine, or simply enjoyed as a refreshing aperitif.
